perfect lonely lady dinner

// If you're home alone at night and you don't feel like cooking a fancy dinner but nor like eating takeout food, this is the solution: SALMON! Super healthy and done in a sec. Just pop it in the oven and bake it. I will take you through all the steps and show you how to make an easy and healthy meal. //

1. Get yourself a baking dish and put some olive oil in there and lay the salmon on top of that so that it doesn't stick to the tray. What's really good with fish is dille and lemon, so here I sprinkled some (ehh.. a lot!) lemon juice and dille on top of the fish. I also put another slice of lemon in the tray for even more flavour. I really like tomatoes so I put a few baby tomatoes in there as well. Don't forget the salt and pepper! Bake this in the oven at 180C for about 17 minutes.

2. Clean two (or more) potatoes and put them in a microwaveproof box with 0.5 cm layer of water. The water will steam-boil-cook them and make them really yummy. Close the box with the lid, because you don't wanna let the steam escape form the box, and put this in the microwave on 800W for about 10 minutes. Note: The hot steam will "suck in" the lid very firmly as soon as the outer temperature is a lot cooler, so keep this in mind when you open the box. Try to do this as soon as you take them out of the microwave OR let it cool down a bit first so that the pressure gets less.

3. The salmon and potatoes are cooking so now you have some time left to prepare a salad. Here I made one with mixed salad greens and baby tomatoes and a little bit of cucumber. I made the dressing / sauce by mixing yoghurt, mayonaise, dille, lemon juice, olive oil, pepper and salt.

Enjoy!
